If there’s one thing I inherited from my dad, it’s a sweet tooth! During this time of year, I find myself needing to curb that sweet tooth before Spring, Summer and swimsuits! One day when I was browsing Pinterest, I found this easy, not-too-sugary recipe that is delicious. If you are looking for something to satisfy a “sweets” craving, these Lemon Coconut Balls are for you.

Here are the five ingredients you’ll need:
  • 2 cups (& then a little extra) shredded coconut (I used sweetened but unsweetened would work just as well)
  • Zest and juice of one lemon
  • 2 Tbsp coconut oil
  • 2-3 Tbsp honey
  • 1/2 cup almonds

First, zest the lemon. Then, place all ingredients into a food processor & blend until a mixture is formed.

Roll the mixture into one inch balls. If the mixture isn’t easily forming a ball, put the mixture into the refrigerator for about 10 minutes and let it harden. Roll the balls into the extra coconut.
